The latest news on nutrition from the “Atkins Diet” crowd is that carbohydrates cause cancer. You might suspect that this is an oversimplification and you’d be right. When I spoke with John Gilman on this, he confirmed my suspicions that the research is tied to the warnings I presented in previous FitBit articles on the dangers of acrylamides. As a refresher, the frying and baking of simple carbohydrates (namely flour from grains) creates acrylamides that become carcinogenic in the body. I would like to tell you more on this, but John had just recently received a letter from Johns Hopkins that we both felt had greater urgency to you (besides, you can go back to previous issues of FitBits and FitNews archived on the website).
