Sauerkraut is pickled cabbage, that has been shredded, salted and fermented. Vinegar is then added along with some other spices. Sauerkraut fermentation is the process of microorganisms on the cabbage digesting its natural sugars and converting them into carbon dioxide and organic acids. The process starts when the naturally occurring yeast and bacteria that are present in cabbage, come into contact with the air and the sugars in the cabbage.
As the process continues, this fermentation promotes the growth of beneficial probiotics. Probiotics are beneficial bacteria that act as a line of defense against toxins and harmful bacteria.
