Everyone knows the Whos love their Roast Beast...and so do we. Enjoy our holiday Prime Rib Roast Recipe!

  • 8-10 lb Prime Rib Roast
  • 3 celery stalks
  • 1 carrot
  • ½ onion
  • 2 teaspoons of worchester sauce
  • 1 & 1/2 tablespoons of Olive oil
  • 1 & 1/2 teaspoons of Salt
  • 1 teaspoon of pepper

Remove roast from refrigerator and let sit for about 30 minutes before preparing.

Preheat oven to 500 degrees.

In a small bowl mix salt pepper, olive oil, and Worchester sauce. Rub all over the roast.

Chop your celery, carrots, and onions into very small pieces. Place the veggies on top of the roast with the veggies.

Start by cooking your prime rib at 500°F for 15 minutes and then lower the oven temperature to 325° F and cook for 10-12 min per pound for rare, or 13-14 min per pound for medium rare, or 14-15 min per pound for medium well.

For a 10 lb roast it will cook within 2 ½ hours. After 1 1/2 hour cover top of roast with a tented aluminum foil. Then continue cooking for the remaining hour A meat thermometer is essential to ensure you cook it perfectly!

Roast your prime rib until the thermometer registers:

· 115-120˚F for rare

· 125-130˚F for medium rare

· 135-140° F for medium

· 145-150 F° for medium well

Remember that when you take the meat out of the oven it will still be cooking so do not overcook your meat.
