Baked Cinnamon Apple Crisp

Warm baked sliced Honeycrisp apples in a small baking dish topped with a golden brown crispy rolled oat and pecan crumble.

Yields: 2 Servings

Ingredients
  • 2 large Honeycrisp apples, cored and sliced
  • 1/2 cup rolled oats
  • 1 tbsp coconut oil, melted
  • 1 tsp ground cinnamon
  • 2 tbsp pecans, chopped
Directions
  1. Preheat your oven to 375°F (190°C).
  2. Arrange the cored and sliced apples in a small baking dish.
  3. In a separate bowl, mix the rolled oats, melted coconut oil, ground cinnamon, and chopped pecans together.
  4. Spread the oat and pecan mixture evenly over the top of the sliced apples.
  5. Cover the dish with foil and bake for 15 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the topping is crisp and the apples are soft.

Top with Greek yogurt (plain or vanilla) for added protein, texture, and flavor and enjoy!
