Baked Parmesan Zucchini Crisps
Prep time: 10 mins | Cook time: 15 mins
Yields: 2 Servings
Ingredients
- 2 medium organic green zucchinis
- 1/2 cup of finely grated parmesan cheese
- 1 tablespoon of extra virgin olive oil
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of smoked paprika
- A pinch of coarse sea salt
Directions
- Preheat your oven to four hundred degrees Fahrenheit and line a large baking sheet with a sheet of parchment paper.
- Wash the two organic green zucchinis thoroughly and slice them crosswise into uniform one-quarter-inch thick rounds.
- Place the zucchini rounds into a large mixing bowl, drizzle the extra virgin olive oil over them and toss the pieces until they are evenly coated.
- Combine the finely grated parmesan cheese, garlic powder, smoked paprika and coarse sea salt in a separate shallow bowl.
- Dip each oiled zucchini round directly into the cheese mixture, pressing firmly so the seasoning sticks to both sides of the green flesh.
- Arrange the coated zucchini slices in a single layer across the lined baking sheet, leaving a small space between each piece.
- Slide the baking sheet into the preheated oven and bake for roughly fifteen minutes until the cheese forms a golden brown crust.
- Remove the crispy snacks from the oven, let them cool for two minutes on the baking sheet to crisp up fully and serve immediately.
Enjoy!
