Berry Yogurt Protein Breakfast Parfait
Ingredients (about 2 servings)
-
1½ cups plain Greek yogurt (2% or 0%)
-
½ cup mixed berries (fresh or frozen and thawed)
-
¼ cup granola or rolled oats
-
1–2 teaspoons honey or maple syrup (optional)
-
½ teaspoon vanilla extract
-
Pinch of salt (about 1/16 teaspoon)
Optional toppings “to taste”
-
Extra berries
-
A few chopped nuts (almonds, walnuts, or pecans)
-
Chia seeds or flaxseed
Directions
-
Mix the yogurt base
-
In a bowl, stir together Greek yogurt, vanilla, chia or flax, and a pinch of salt.
-
-
If you like a slightly sweet breakfast, stir in 1–2 teaspoons honey or maple syrup.
*Taste a spoonful of the yogurt and adjust "to taste"
-
If you want it sweeter → add a bit more honey/maple, ½ teaspoon at a time.
-
If you want more vanilla → add a few extra drops and stir again.
-
-
Layer the parfaits
-
In 2 jars or bowls, add a layer of yogurt, then a layer of berries, then a sprinkle of granola or oats.
-
Repeat until ingredients are used up, ending with berries and granola on top.
-
-
Add optional toppings
-
Top with extra berries, a few chopped nuts, or a pinch more chia or flax “to taste.”
-
-
Serve or chill
-
Enjoy immediately for crunchier granola, or cover and refrigerate for 30–60 minutes if you like the oats or granola slightly softened.
-
Leftovers; Store in the fridge for 1–2 days. If using granola, it will soften; if you want it crunchy, add it right before serving.
Enjoy!
