Cilantro Lime Shredded Chicken

Yields: 6 Servings
Ingredients
- 2 pounds of boneless pasture-raised chicken breasts
- 1 cup of organic chicken bone broth
- The juice of 3 fresh limes
- 1 tablespoon of ground cumin
- 1 finely minced jalapeño pepper with the seeds removed
- 1 cup of chopped fresh cilantro
Directions
- Place the raw chicken breasts flat into the bottom of a heavy slow cooker or deep Dutch oven.
- In a separate bowl, whisk together the organic chicken bone broth, fresh lime juice, ground cumin and minced jalapeño, then pour the liquid mixture completely over the chicken.
- Cover the cooker tightly and set it to low heat for six hours, or simmer it on low stove settings for roughly three hours until the meat is completely tender.
- Remove the chicken breasts from the cooking liquid, place them on a large cutting board and use two forks to shred the meat along its natural fiber lines.
- Return the shredded chicken back into the hot broth, fold in the freshly chopped cilantro and let the meat absorb the juices for ten minutes before storage.
