Elegant Avocado and Shrimp Salad

Ingredients:

12 medium shrimp, peeled and deveined

2 teaspoons olive oil

1 ripe avocado, diced

½ cup cherry tomatoes, halved

2 cups baby spinach or mixed greens

Juice of half a lime

Salt and freshly ground black pepper, to taste

1 tablespoon fresh cilantro or basil, finely chopped
Directions:
1. Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper, then sauté shrimp for 2–3 minutes per side until pink and fully cooked. Set aside.
2. In a large bowl, gently combine diced avocado, cherry tomatoes, and mixed greens.
3. Drizzle salad with lime juice, season with salt and pepper, and lightly toss to coat.
4. Plate the salad, arrange shrimp elegantly on top, and garnish with fresh cilantro or basil.
5. Serve immediately, optionally with extra lime wedges.
