Garlic Herb Beef Tenderloin Bites

Ingredients
- 1 pound of lean beef tenderloin cut into 1-inch cubes
- 3 cloves of smashed fresh garlic
- 2 tablespoons of clarified grass-fed butter
- 1 tablespoon of freshly chopped rosemary leaves
- 1 teaspoon of dried thyme
- 1/2 teaspoon of coarse pink Himalayan salt
- 1/4 teaspoon of cracked black pepper
Directions
- Pat the beef tenderloin cubes completely dry with a paper towel and place them in a bowl.
- Toss the beef cubes with the coarse pink Himalayan salt and cracked black pepper until the meat is evenly seasoned.
- Heat the clarified grass-fed butter in a heavy cast-iron skillet over high heat until the pan is smoking hot.
- Add the seasoned beef tenderloin cubes to the hot skillet in a single layer, ensuring the pieces do not crowd the pan.
- Sear the beef cubes without moving them for a full two minutes to allow a deep caramelized outer crust to form.
- Flip the beef cubes over, toss the smashed fresh garlic, chopped rosemary leaves and dried thyme directly into the hot butter, and sear for another two minutes.
- Spoon the hot melted garlic herb butter continuously over the beef for the final sixty seconds of cooking.
- Remove the skillet from the heat immediately, transfer the beef bites to a warm plate and let the meat rest for three minutes before serving.
*Add roasted garlic as a topping for extra flavor and crunch.
