Garlic Herb Beef Tenderloin Bites

Prep time: 10 mins | Cook time: 6 mins
Yields:
2 Servings

Ingredients

  • 1 pound of lean beef tenderloin cut into 1-inch cubes
  • 3 cloves of smashed fresh garlic
  • 2 tablespoons of clarified grass-fed butter
  • 1 tablespoon of freshly chopped rosemary leaves
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of coarse pink Himalayan salt
  • 1/4 teaspoon of cracked black pepper

Directions

  1. Pat the beef tenderloin cubes completely dry with a paper towel and place them in a bowl.
  2. Toss the beef cubes with the coarse pink Himalayan salt and cracked black pepper until the meat is evenly seasoned.
  3. Heat the clarified grass-fed butter in a heavy cast-iron skillet over high heat until the pan is smoking hot.
  4. Add the seasoned beef tenderloin cubes to the hot skillet in a single layer, ensuring the pieces do not crowd the pan.
  5. Sear the beef cubes without moving them for a full two minutes to allow a deep caramelized outer crust to form.
  6. Flip the beef cubes over, toss the smashed fresh garlic, chopped rosemary leaves and dried thyme directly into the hot butter, and sear for another two minutes.
  7. Spoon the hot melted garlic herb butter continuously over the beef for the final sixty seconds of cooking.
  8. Remove the skillet from the heat immediately, transfer the beef bites to a warm plate and let the meat rest for three minutes before serving.

*Add roasted garlic as a topping for extra flavor and crunch.

Enjoy!
