Greek Turkey Burgers

Ingredients:

  • 1.25 lb ground turkey

  • 6 halves sun-dried tomatoes

  • 1 red onion

  • 2 oz frozen spinach

  • 1/4 cup crumbled feta

  • 1 tsp dried oregano

  • 1/3 cup bread crumbs

  • 1 cucumber

  • Salt, to taste

  • Pepper, to taste

  • 1/2 tsp garlic, minced

  • 1 egg

Directions:

  1. Thaw spinach and squeeze out moisture.
  2. Roughly chop spinach, sun-dried tomatoes, and 1/4 of the red onion.
  3. In a large bowl, combine ground turkey, chopped spinach, tomatoes, onion, feta, garlic, oregano, egg, and breadcrumbs.
  4. Add 1/2 tsp salt and 1/2 tsp pepper. Mix well and shape into 6 patties.
  5. Cook thoroughly.

Serve with sauce, red onion, or cucumber slices if desired.
