High-Protein Blueberry & Oats Bake

Single-serve protein baked oatmeal in an oven-safe ramekin topped with fresh bubbling blueberries and rolled oats.

Ingredients
  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 cup fresh blueberries
  • 1/2 cup egg whites
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp baking powder
Directions
  1. Preheat your oven to 350°F (175°C) and grease a small oven-safe ramekin or dish.
  2. In a mixing bowl, stir together the rolled oats, vanilla protein powder, and baking powder.
  3. Pour in the egg whites and unsweetened almond milk. Stir until completely combined.
  4. Gently fold in the fresh blueberries.
  5. Transfer the mixture into your prepared dish.
  6. Bake for 20 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
