A savory, antioxidant-rich breakfast or recovery meal designed for the gut-brain axis.

Yields: 2 Servings

Ingredients:

  • 1 cup Black (Forbidden) Rice, rinsed
  • 2 cups Organic Bone Broth (Chicken or Beef)
  • 1/2 cup Cabbage Kimchi, roughly chopped
  • 1 tsp Toasted Sesame Oil
  • 1 tbsp Tamari or Coconut Aminos
  • 2 Soft-Poached Eggs
  • 1 sheet Toasted Nori, torn into strips
  • 1 tbsp Scallions, thinly sliced

Directions:

  1. In a medium pot, bring the black rice and bone broth to a boil. Reduce heat to low, cover, and simmer for 25–30 minutes until the liquid is absorbed and rice is tender.
  2. Stir in the chopped kimchi, sesame oil, and tamari. Let it sit covered for 2 minutes to warm the kimchi through.
  3. Divide the porridge into two bowls.
  4. Top each bowl with a soft-poached egg, nori strips, and fresh scallions. Serve immediately.
