Kimchi & Forbidden Rice Porridge

Yields: 2 Servings
Ingredients:
- 1 cup Black (Forbidden) Rice, rinsed
- 2 cups Organic Bone Broth (Chicken or Beef)
- 1/2 cup Cabbage Kimchi, roughly chopped
- 1 tsp Toasted Sesame Oil
- 1 tbsp Tamari or Coconut Aminos
- 2 Soft-Poached Eggs
- 1 sheet Toasted Nori, torn into strips
- 1 tbsp Scallions, thinly sliced
Directions:
- In a medium pot, bring the black rice and bone broth to a boil. Reduce heat to low, cover, and simmer for 25–30 minutes until the liquid is absorbed and rice is tender.
- Stir in the chopped kimchi, sesame oil, and tamari. Let it sit covered for 2 minutes to warm the kimchi through.
- Divide the porridge into two bowls.
- Top each bowl with a soft-poached egg, nori strips, and fresh scallions. Serve immediately.
