Ingredients
- 1/2 lb 93% lean ground beef
- 1 large sweet potato, peeled and cubed small
- 1/2 cup yellow onion, diced
- 1 cup fresh spinach
- 1 tsp garlic powder
- Salt to taste
Directions
- Heat a large, non-stick skillet over medium-high heat.
- Add the lean ground beef and diced onion. Cook for 5 to 6 minutes, breaking the beef apart with a wooden spoon, until the meat is fully browned. Drain any excess grease.
- Add the small sweet potato cubes and garlic powder to the skillet. Cover with a lid.
- Reduce heat to medium and cook for 7 to 8 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
- Uncover, stir in the fresh spinach, and cook for 1 additional minute until the greens wilt. Season with salt.
