Prep time: 10 mins | Cook time: 10 mins
Yields: 4 Servings
Ingredients
- 1 pound of extra-lean ground turkey breast
- 1 large bunch of fresh asparagus
- 3 cloves of minced garlic
- 2 tablespoons of extra virgin olive oil
- 1 freshly squeezed lemon
- 1 teaspoon of dried oregano
- 1/2 teaspoon of coarse sea salt
Directions
- Wash the asparagus and snap off the woody ends, then slice the remaining stalks into one-inch pieces.
- Heat the olive oil in a large skillet over medium-high heat, add the minced garlic and sauté for roughly sixty seconds until fragrant.
- Add the ground turkey breast to the skillet, breaking it apart with a wooden spoon as it cooks until it is completely browned.
- Toss the sliced asparagus pieces into the skillet with the turkey, seasoning the mixture with the dried oregano and sea salt.
- Reduce the heat to medium, pour the fresh lemon juice over the top and cover the skillet with a lid to let the asparagus steam for roughly four to five minutes until it is tender yet crisp.
- Remove the lid, stir the contents thoroughly to combine the pan juices and serve immediately as a high-protein dinner base.
Enjoy!
