Mediterranean Fresh Salad
Ingredients:
- Rice or Orzo
- Cherry Tomatoes, halved
- Cucumber, sliced
- Kalamata Olives, halved
- Fresh Oregano, chopped
- Scallions, sliced
- 1 can Chickpeas
Dressing:
- 2 garlic cloves, grated
- 1 lemon, juiced
- 1 lemon, zest
- Olive oil
Directions:
Add all ingredients to bowl, this recipe is to taste so everything added is as little or much as you would like. Add protein such as Greek marinated chicken, shrimp, lamb, etc.
Mix dressing and combine with ingredients bowl.
Pro Tip: Add protein of choice to elevate from a side dish to a main dish.
Serve either warm or cool/cold.
