Ingredients
  • 1 can (5 oz) tuna in water, drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup English cucumber, diced
  • 1/4 cup Kalamata olives, halved
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
Directions
  1. In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, and halved Kalamata olives.
  2. Flake the drained tuna into the bowl using a fork.
  3. Drizzle the extra virgin olive oil and fresh lemon juice over the top of the ingredients.
  4. Toss everything thoroughly until the dressing is evenly distributed.
  5. Serve cold or at room temperature.
