Miso-Glazed Tempeh with Lion’s Mane Crumbles

Ingredients:
- 8 oz Tempeh, cubed
- 4 oz Fresh Lion’s Mane Mushrooms, torn into bite-sized pieces
- 1 tbsp Coconut Oil
- 1 tbsp White Miso Paste
- 1 tsp Fresh Ginger, grated
- 1 tbsp Mirin or Rice Vinegar
- 2 cups Dandelion Greens (or Kale), chopped
- 1 tbsp Toasted Hemp Hearts
Directions:
- Heat coconut oil in a large skillet over medium-high heat. Add tempeh and Lion's Mane mushrooms. Sauté until both are golden brown and crispy (about 8 minutes).
- In a small jar, whisk miso, ginger, and mirin with 1 tbsp of water.
- Reduce skillet heat to low. Add the dandelion greens and pour the miso glaze over the mixture. Toss for 1–2 minutes until the greens are just wilted.
- Plate and garnish with hemp hearts for added Omega-3s.
