A brain-boosting plant-based dish utilizing adaptogenic mushrooms and fermented protein.

Yields: 2 Servings

Ingredients:

  • 8 oz Tempeh, cubed
  • 4 oz Fresh Lion’s Mane Mushrooms, torn into bite-sized pieces
  • 1 tbsp Coconut Oil
  • 1 tbsp White Miso Paste
  • 1 tsp Fresh Ginger, grated
  • 1 tbsp Mirin or Rice Vinegar
  • 2 cups Dandelion Greens (or Kale), chopped
  • 1 tbsp Toasted Hemp Hearts

Directions:

  1. Heat coconut oil in a large skillet over medium-high heat. Add tempeh and Lion's Mane mushrooms. Sauté until both are golden brown and crispy (about 8 minutes).
  2. In a small jar, whisk miso, ginger, and mirin with 1 tbsp of water.
  3. Reduce skillet heat to low. Add the dandelion greens and pour the miso glaze over the mixture. Toss for 1–2 minutes until the greens are just wilted.
  4. Plate and garnish with hemp hearts for added Omega-3s.
