Pan-Seared Salmon with Lemon-Dill Sauce

Ingredients:

2 (5-ounce) salmon fillets, skin-on

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

1 lemon, sliced thinly

2 tablespoons fresh dill, finely chopped

¼ cup plain Greek yogurt (or dairy-free yogurt for dairy-free alternative)

1 teaspoon Dijon mustard
Directions:
1. Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.
2. Heat olive oil in a non-stick pan over medium-high heat.
3. Place salmon fillets skin-side down in the pan. Cook for 4–5 minutes until crispy.
4. Flip salmon and cook for another 3–4 minutes, or until desired doneness.
5. Meanwhile, in a small bowl, mix yogurt, dill, Dijon mustard, salt, and pepper.
6. Serve salmon topped with lemon slices and drizzle generously with lemon-dill sauce.
