Pita Spinach Calzone

Perfect for a light lunch or a satisfying snack!

Ingredients:

  • 1 pita bread, approximately 6 inches (2 oz) 
  • 1 oz of low fat or fat free shredded mozzarella cheese
  • 1 tsp of oregano 
  • ¼ tsp of Italian seasoning 
  • ½ tomato, fresh, medium size 
  • ¼ cup of lowfat or nonfat ricotta cheese 
  • ½ tbsp of low fat or nonfat parmesan cheese
  • ½ cup of frozen spinach 

 Directions: 
Preheat oven to 375-degrees F. Thaw the spinach and squeeze to remove the water. Wash and dice the tomato. Mix the spinach, tomato, mozzarella, ricotta and parmesan cheeses with the oregano and Italian seasoning. Stuff pita with mixture and bake on a baking sheet lightly sprayed with cooking spray for 12-15 minutes, until heated through.
