Pumpkin Energy No-Bake Bites
Ingredients:
- 1¼ rolled oats
- ¼ cup ground flaxseed
- 1 tablespoon chia seeds
- 1½ ground cinnamon
- 1½ ground ginger
- 1½ ground nutmeg
- 1½ ground cloves
- Pinch of salt
- ½ cup creamy peanut butter
- ¼ cup honey
- ¼ pure pumpkin puree
- ½ teaspoon vanilla
- ¼ cups mini chocolate chips (optional)
- 1/8 cups chopped dates (optional)
Directions:
- With paddle attachment in standing mixer, add oats to salt
- Once combined, add peanut butter to vanilla
- Once combined, stir in chocolate chips and dates (if using)
- Roll 2 tablespoons into balls and place into an airtight container
- Store in refrigerator for up to 1 week
