Pumpkin Energy No-Bake Bites

Ingredients:

  • 1¼ rolled oats
  • ¼ cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1½ ground cinnamon
  • 1½  ground ginger
  • 1½  ground nutmeg
  • 1½  ground cloves
  • Pinch of salt
  • ½ cup creamy peanut butter
  • ¼ cup honey
  • ¼ pure pumpkin puree
  • ½ teaspoon vanilla
  • ¼ cups mini chocolate chips (optional)
  • 1/8  cups chopped dates (optional)

 

Directions:

  1. With paddle attachment in standing mixer, add oats to salt
  2. Once combined, add peanut butter to vanilla
  3. Once combined, stir in chocolate chips and dates (if using)
  4. Roll 2 tablespoons into balls and place into an airtight container
  5. Store in refrigerator for up to 1 week
