Spinach, Berry & Walnut Heart-Healthy Salad
(about 2–3 servings)
Ingredients

4 cups baby spinach or mixed greens

1 cup mixed berries (strawberries, blueberries, raspberries), sliced if large

¼ cup walnuts, roughly chopped

¼ cup crumbled feta or goat cheese (optional)

¼ small red onion, very thinly sliced (optional; to taste)
Balsamic vinaigrette

2 tablespoons extra-virgin olive oil
-
1 tablespoon balsamic vinegar
-
1 teaspoon Dijon mustard

1 teaspoon honey or maple syrup

Salt - Start with a small pinch (about 1/16 teaspoon), then adjust to taste

Black pepper - Start with a pinch, then adjust to taste
Directions

Add spinach or mixed greens to a large bowl.

Top with berries, walnuts, feta or goat cheese (if using), and a few slices of red onion.

Make the vinaigrette

In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon, and honey or maple syrup until smooth.

Add a pinch of salt and pepper and taste:

If you want it sweeter → add a bit more honey or maple, ¼ teaspoon at a time.

If you want more tang → add a small splash more balsamic.

Drizzle about half of the vinaigrette (or to taste) over the salad and toss gently.

If it needs more flavor → add more dressing a little at a time.

If it feels too strong → toss in another handful of greens to balance it.

Plate the salad and finish with an extra sprinkle of walnuts or a twist of black pepper, if desired.
Best enjoyed fresh.
For make-ahead, store the dressing separately and toss just before serving.
