Tabbouleh

Ingredients:

  • 1/3 cup olive oil
  • 3 Tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ bulgur wheat
  • 3 bunches curly parsley, finely chopped
  • 2 beefsteak tomatoes, finely chopped
  • ¼ cup fresh mint, finely chopped

 

Directions:

Whisk olive oil, lemon juice, salt and pepper together.

Add bulgur wheat.

Let grains soak dressing about 20 mins (note: this step replaces the need to soak in boiling water you may see on the box).

Add remaining ingredients.

Can serve at room temperature or chilled.

 

Best with pita.
