Tabbouleh

Ingredients:
- 1/3 cup olive oil
- 3 Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- ¼ bulgur wheat
- 3 bunches curly parsley, finely chopped
- 2 beefsteak tomatoes, finely chopped
- ¼ cup fresh mint, finely chopped
Directions:
Whisk olive oil, lemon juice, salt and pepper together.
Add bulgur wheat.
Let grains soak dressing about 20 mins (note: this step replaces the need to soak in boiling water you may see on the box).
Add remaining ingredients.
Can serve at room temperature or chilled.
Best with pita.
