The Market Medley Sandwich

Ingredients (makes 2 sandwiches):

4 slices hearty whole grain or multigrain bread (toasted if desired)

1 ripe avocado, mashed with lemon juice and a pinch of chili flakes

2 tbsp roasted red pepper hummus or basil pesto

1/2 cup shredded purple cabbage or baby arugula
-
1/2 roasted zucchini or eggplant, sliced (can be made ahead)
-
1/4 cup grated carrot or pickled carrot ribbons
-
1–2 slices sharp white cheddar or crumbled goat cheese
-
2 thin slices roasted turkey breast or grilled tofu (optional)
-
Handful of microgreens or sprouts
-
Sea salt & fresh cracked black pepper to taste
Instructions:

Spread hummus or pesto on one slice of bread, and mashed avocado on the other.

Layer roasted zucchini or eggplant, cabbage/arugula, and carrots.

Add cheese and optional protein.
-
Top with microgreens, season with salt and pepper.

Close the sandwich, press gently, and slice in half. Serve fresh.
