The Market Medley Sandwich

Ingredients (makes 2 sandwiches):

  • 4 slices hearty whole grain or multigrain bread (toasted if desired)

  • 1 ripe avocado, mashed with lemon juice and a pinch of chili flakes

  • 2 tbsp roasted red pepper hummus or basil pesto

  • 1/2 cup shredded purple cabbage or baby arugula

  • 1/2 roasted zucchini or eggplant, sliced (can be made ahead)

  • 1/4 cup grated carrot or pickled carrot ribbons

  • 1–2 slices sharp white cheddar or crumbled goat cheese

  • 2 thin slices roasted turkey breast or grilled tofu (optional)

  • Handful of microgreens or sprouts

  • Sea salt & fresh cracked black pepper to taste

 

Instructions:

  1. Spread hummus or pesto on one slice of bread, and mashed avocado on the other.

  2. Layer roasted zucchini or eggplant, cabbage/arugula, and carrots.

  3. Add cheese and optional protein.

  4. Top with microgreens, season with salt and pepper.

  5. Close the sandwich, press gently, and slice in half. Serve fresh.
