Zucchini Soup A La Crema
Where tender zucchini meets a velvety, rich cream base for a comforting and flavorful experience.
Ingredients:
- 2 fresh medium zucchinis
- ½ onion, small
- 1 clove of garlic
- ½ tsp. curry powder
- ½ tsp. of Dijon mustard
- 1 cup of vegetable broth
- 1 tsp. of olive oil
- 3 ounces of yogurt, dairy-free (soy), low fat or nonfat
Directions:
Prepare rice according to recipe, omit salt. Rinse and chop zucchini into bite-size pieces; chop onion and mince garlic. Heat oil in a medium nonstick saucepan on medium heat and sauté garlic and onion with curry powder until golden. Add zucchini, mustard, and broth; stir well and bring to a boil. Reduce heat to low, cover and simmer for 10 min. Let cool uncovered for 10-15 minutes, then transfer to a blender and puree. Return soup to saucepan, stir in yogurt and rice, and heat through on low heat and serve.
