Cheese Steak Stuffed Peppers

Ingredients:

  • 4 bell peppers, halved

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 1 ½ lb skirt steak, thinly sliced

  • 1 yellow onion, sliced

  • 16 oz sliced mushrooms

  • 3 garlic cloves, minced

  • 8 slices provolone cheese

  • ¼ cup Italian dressing

  • Oregano, Italian garlic seasoning, salt & pepper to taste

Directions:

  1. Preheat oven to 325°F.
  2. Place bell peppers face down on a baking sheet. Bake for 20 minutes.
  3. In a large skillet, heat oil and butter.
  4. Add steak and cook to taste.
  5. Add onion, garlic, and mushrooms.
  6. Once cooked, add Italian dressing and seasonings.
  7. Stuff the peppers with the mixture and top each with provolone.
  8. Bake for an additional 15 minutes until cheese is melted and bubbly.
